Rutt's Hut and the deep fried ripper
417 River Road, Clifton, New Jersey

Royal and Anna Rutt opened this stand on River Road in 1928 and started dropping hot dogs into hot oil until the skins split, which is where the name ripper comes from. You order by how far it goes: in and out is barely cooked, a weller is done, a cremator is burnt black. The relish is the house secret, a mustard and cabbage mix closer to a mild kraut. Four Greek employees bought the place in 1974 and it has been run the same way since.
