White ogeechee tupelo grows in the Apalachicola swamps and almost nowhere else, and for about three weeks in spring the beekeepers pole their hives out onto platforms in the river to catch that bloom alone. The honey does not granulate, which is why diabetics were once told to seek it out. A film was made about the families who do it.
