Marc Savoy builds accordions by hand in a shop where musicians turn up on Saturday mornings to play in the showroom over boudin and beer, no admission and no stage. A restored theatre down the street broadcasts a live Cajun and Creole show in French every week. Between them they kept a music going that in the 1960s was widely expected to die with its players.
