The Hot Brown at the Brown Hotel

The hotel's kitchen invented an open-faced turkey sandwich under a blanket of Mornay sauce, run under the broiler until it browns, to feed the crowd coming off the ballroom floor at two in the morning wanting something other than another cocktail. It is on menus across the state as the Hot Brown, and the hotel still serves several hundred a day to people who came only for that.
