Stone Barns and the farm behind Blue Hill

Eighty acres of the Rockefeller estate became a working four season farm and agricultural research centre, ringed on three sides by the family's donated parkland. Dan Barber's Blue Hill at Stone Barns operates on the site and cooks from what the fields and greenhouses produce, with kitchen staff working the farm itself. The place did a great deal to move American fine dining toward growing its own ingredients rather than sourcing them.
