George Jenkins quit managing a Piggly Wiggly in Winter Haven and opened his own store in 1930, then built a marble-and-terrazzo food palace with air conditioning and electric-eye doors when both were science fiction. Publix is now the largest employee-owned company in the United States, run from Lakeland, and the chain's cult following treats the chicken tender sub as a regional birthright.
