The Puritan Backroom and the chicken tender

The Puritan began in 1917 as a candy and ice cream shop, and in 1974 the founders' children opened a dining room behind it. That year, the restaurant says, Charlie Pappas marinated and fried chicken trimmings and invented the chicken tender. Recipes for chicken fingers exist from earlier, so the claim is disputed, but the dish is still on the menu under that billing.
