Vidalia, the onion you can bite

A farmer named Mose Coleman discovered in 1931 that onions grown in the low-sulfur soil around Vidalia came up sweet instead of sharp, and the town built an industry on an accident of dirt. Georgia law now restricts the name to onions from twenty counties, one of the few American foods with a legally defended terroir. It is the state vegetable, and locals eat them raw to prove the point.
