Every piece of limburger made in the United States comes out of the Chalet Cheese Cooperative outside Monroe, founded in 1885 by five dairy farmers and still owned by the farms that supply its milk. The smell comes from a bacterium that also lives on human skin, which is the fact everyone repeats and nobody wants to hear. Monroe calls itself the Cheese Capital of the USA, holds a cheese festival every other year, and its high school teams are the Cheesemakers.
