The country Mardi Gras has nothing to do with parades on a boulevard. Masked riders in fringed costumes and tall capuchon hats go house to house begging ingredients, and a farmer throws a live chicken in the air for them to chase down for the gumbo. It descends from medieval French begging rituals and survived here because nobody thought to modernise it.
