Tabasco on a salt dome

Avery Island is not an island but a dome of rock salt pushing up through the marsh, which is why there was a salt mine here and why peppers grow well on the slopes. Edmund McIlhenny mashed his crop with that salt, aged it in barrels for three years and thinned it with vinegar. The recipe has not changed, and the sauce is sold in about 195 countries from this one island.
