Joe's Stone Crab turns a crab nobody ate into a Florida season

Joe Weiss came south for his asthma in 1913 and ran a lunch counter at a bathing casino years before Miami Beach was a city. Around 1920 a visiting Harvard scientist asked him to try boiling the local stone crab, which was then being thrown back. The claw became the restaurant's entire business and eventually a regulated state fishery with a season running October to May.
