A processed blend of cheddar, swiss and provolone with a melting point low enough that it goes to liquid rather than stringing, invented for the local pizza and sold almost nowhere else. St. Louis style pizza is a cracker thin unleavened crust under a sheet of it, cut into squares. Opinions outside the metro area are strong and opinions inside it are stronger.
