Conant Avenue at Six Mile, Detroit
Gus Guerra turned a speakeasy at Six Mile and Conant into a family restaurant in 1946 and baked his square pies in forged steel pans of the kind the auto plants used to hold nuts and bolts. The pans gave the crust its fried edge and its crisp corners of caramelised cheese. Eighty years later the style is on menus from national chains to New York pizzerias, and every one of them traces back to this corner.
