Before refrigeration reached the Keys there was no fresh milk, so cooks used tinned condensed milk, and the acid in the small yellow Key limes sets the custard without any baking. It is said to have been worked out by sponge fishermen with no galley stove. Florida made it the official state pie in 2006, and legislators have periodically proposed making it an offence to serve one dyed green.
