Scott, where the boudin is
Scott, Louisiana
Public domain · Wikimedia Commons
A town of about eighty-five hundred with enough butcher shops selling pork, rice and liver sausage in a casing that the legislature declared it the boudin capital of the world. It is eaten out of the paper standing at the counter, and the accepted method is to squeeze the filling out and discard the casing, or not, depending on who raised you.
