Porter Square, where the porterhouse steak got its name

Sylvester Edson opened a slaughterhouse and hotel at this crossroads in 1833, and Zachariah Porter bought it in 1837 and ran it as Porter's Cattle Market Hotel. Drovers brought cattle down from northern New England, and the trade grew once the Fitchburg Railroad reached the square in 1843. The big loin cut served at the hotel is the usual explanation for the name porterhouse steak, though a Manhattan tavern and Sandusky, Ohio both claim it as well. The market wound down around 1871 and the hotel came down in 1909, leaving the square with the name and a Red Line station.
